There is no meal more British, more comforting, or more fiercely debated than the Sunday roast. It is less a recipe than a ritual — a slow, sociable institution that turns an ordinary Sunday into something worth getting out of bed for. Allow us to pay it the tribute it deserves.

The anatomy of a roast

At its heart sits the meat — beef, chicken, lamb or pork — but the supporting cast is where loyalties are won and lost. Roast potatoes (crisp outside, fluffy within, non-negotiably crunchy). Seasonal vegetables. Stuffing, if you are doing it properly. And, with beef especially, a Yorkshire pudding. Each element is simple; getting them all to the table hot and at once is the true test of a cook.

In praise of the roast potato

If the roast has a soul, it is the potato. Parboiled, roughed up, and roasted in good fat until shatteringly crisp, a great roast potato is one of the small triumphs of British cooking. Get these right and much else is forgiven.

The towering Yorkshire

The Yorkshire pudding began life in the north as a clever way to fill hungry stomachs before the meat arrived. Today it is pure joy: golden, puffed and dramatic, the ideal vessel for catching gravy. Purists will tell you it belongs only with beef. Everyone else quietly has one anyway.

Gravy is non-negotiable

And then there is gravy — the glorious, savoury thread that ties the whole plate together. Made properly from the roasting juices, it is the difference between a good roast and a great one. A dry roast is a tragedy; a generous jug of gravy is salvation.

Whether you make it yourself or seek out a proper pub doing it well, the Sunday roast remains the warmest expression of British home cooking there is. Long may it continue.
